Sweet & Smoky Orange Glazed Chicken
- 2 tablespoons Land O Lakes Butter
- 1 large onion, thinly sliced
- 4 (4- to 5-ounce) boneless skinless chicken breast halves
- 3/4 cup chicken broth
- 1/4 cup honey
- 1/3 cup orange juice
- 1 tablespoon finely chopped chipotle chiles in adobo sauce
- 1 tablespoon cornstarch
- Hot cooked rice
- Melt 1 tablespoon butter in 10-inch nonstick skillet until sizzling; add onion.
- Cook over medium heat, stirring occasionally, 5-7 minutes or until onions are golden and caramelized.
- Remove from skillet; set aside.
- Melt remaining butter in same skillet until sizzling; add chicken.
- Cook over medium heat, turning once, 12-15 minutes or until internal temperature reaches 165F and juices run clear when pierced with a fork.
- Combine all remaining ingredients in bowl; mix well.
- Add to chicken, stirring constantly, 12 minutes or until slightly thickened.
- Stir in cooked onions.
- Serve sauce over chicken and hot cooked rice.
