Copycat of Starbucks Oatmeal Fudge Bars

  1. Preheat oven to 350 degrees F.
  2. Set aside 2 tablespoons of the butter.
  3. Beat the remaining butter with mixer on medium speed for 30 seconds.
  4. Add brown sugar and beat until well mixed.
  5. Beat in eggs and 1 teaspoon vanilla.
  6. In another large bowl stir together flour and baking soda then stir in oats.
  7. Gradually stir dry mixture into beaten mixture.
  8. Set aside.
  9. In a medium saucepan combine the 2 tablespoons butter, the sweetened condensed milk, and chocolate .
  10. Cook over low heat until chocolate melts, stirring occasionally.
  11. Remove from heat.
  12. Stir in 1 teaspoon vanilla.
  13. Press three quarters of the oat mixture into the bottom of an ungreased 15x10x1inch baking pan (or something close to it).
  14. Spread chocolate mixture over the oat mixture.
  15. Use your fingers and dot the remaining oat mixture over the chocolate.
  16. Tip: Wet your fingers slightly to help prevent sticking.
  17. Bake for about 25 minutes or until top is lightly browned (chocolate mixture will still look moist).
  18. Cool on a wire rack.
  19. Cut into 2x2 inch inch bars.
