Lancashire Hotpot
- 3 lbs rump roast, sliced thinly
- 3 potatoes, sliced
- 3 onions, sliced
- 4 large carrots, sliced
- 2 cups beef stock
- salt
- pepper
- Layer a 3 quart casserole dish:.
- sliced potatoes, then onions, then carrots, then beef, add salt and pepper.
- Repeat layers.
- Pour stock over the layers just until covered.
- Put in 300F oven for 2 hours.
- Serve as is with crusty bread.
