Gingerbread Pancakes

  1. In a large bowl, combine the pancake mix, brown sugar, cocoa, ginger, pumpkin pie spice, and baking soda.
  2. In a separate bowl, combine the egg yolks, milk, coffee, oil and molasses.
  3. Then add the wet ingredients to the dry ingredients just until moistened.
  4. In a small bowl, beat the egg whites on medium speed until stiff peaks form.
  5. Fold into the batter.
  6. Pour the batter by not quite 1/4 cupfuls onto a hot griddle which has been coated with non stick spray.
  7. Turn when bubbles form on top and cook the 2nd side until golden brown.
