Budino di Riso -- Rice Pudding

  1. In a medium saucepan bring 1 1/2 cups of water to a boil.
  2. Add rice, stir and reduce to a simmer.
  3. Cook for approximately 10 minutes or rice is semicooked, yet firm, and all the water has been absorbed.
  4. Towards the end of the process, make sure to continually stir the rice as it will stick and burn.
  5. In another saucepan add cooked rice, 1 1/2 cups of milk, sugar and salt.
  6. Cook over medium heat for about 15 minutes, stirring frequently.
  7. Stir in remaining 1/2 cup of milk, beaten egg and raisins.
  8. Return the mixture to a simmer and cook an additional 5 minutes more.
  9. Remove from heat and stir in butter and vanilla.
  10. Pudding will thicken as it cools.
  11. Serve warm or cold.
