Budino di Riso -- Rice Pudding
- 3/4 cup white rice, uncooked (Aborio)
- 2 cups milk, whole, divided
- 1/3 cup white sugar
- 1/4 tsp. salt
- 1 egg beaten
- 2/3 cup golden raisins
- 1 tbsp. butter
- 1/2 tsp. vanilla
- In a medium saucepan bring 1 1/2 cups of water to a boil.
- Add rice, stir and reduce to a simmer.
- Cook for approximately 10 minutes or rice is semicooked, yet firm, and all the water has been absorbed.
- Towards the end of the process, make sure to continually stir the rice as it will stick and burn.
- In another saucepan add cooked rice, 1 1/2 cups of milk, sugar and salt.
- Cook over medium heat for about 15 minutes, stirring frequently.
- Stir in remaining 1/2 cup of milk, beaten egg and raisins.
- Return the mixture to a simmer and cook an additional 5 minutes more.
- Remove from heat and stir in butter and vanilla.
- Pudding will thicken as it cools.
- Serve warm or cold.
