Raspberry Valentines

  1. Slice pound cake into 4 (1-inch) slices.
  2. With a medium-sized heart-shaped cookie cutter, cut out hearts from each slice of pound cake.
  3. Set aside.
  4. In a medium bowl combine 1/2 the raspberries and the sugar.
  5. Crush berries with a fork.
  6. Add remaining raspberries to the bowl.
  7. Add the lemon juice and mix well.
  8. Whip chilled cream until the soft peak stage.
  9. Using 2 dessert plates, place 1 heart on each plate.
  10. Pour 3/4 of the raspberry mixture over each cake.
  11. Cover cakes with another pound cake heart.
  12. Top with whipped cream and remaining raspberry mixture.
