Shredded Asian Prawn Salad
- 3 cups finely shredded chinese cabbage
- 1 large carrot, coursely grated
- 1 small red capsicum, thinly sliced
- 1 Lebanese cucumber, cut into ribbons using a peeler
- 75g vermicelli, cooked according to pack directions
- 1/4 cup mint leaves, torn
- 12 cooked prawn cutlets Safeway 1 lb For $8.99 thru 02/09
- 1/3 cup KRAFT FREE* Thai Lime & Coriander Dressing
- 1 teaspoon grated ginger
- Combine cabbage, carrot, capsicum, cucumber, vermicelli and mint in a large bowl.
- Toss through cooked prawns.
- Place salad into a serving bowl and drizzle with combined dressing and ginger.
- Serve.
