Mexican Cornbread

  1. Brown the ground beef and onion and drain off fat.
  2. Prepare the corn bread according to the package directions (this is what the eggs and milk are for.)
  3. Spray a 9x13 pan with cooking spray.
  4. Spread a thin layer of the corn bread mix in the bottom of pan.
  5. Next, add the ground beef.
  6. Spread the cheese over the ground beef.
  7. Add as many jalapeno slices as you like.
  8. To the remaining corn bread mix, add the can of cream corn.
  9. Pour the corn bread mix over the top of casserole and spread it out to the edges.
  10. Bake according to the directions on the corn bread mix.
  11. (Note: Ive made this with Jiffy corn bread mix and it was too sweet for my taste.
  12. I recommend you use a less sweet mix.)
