Mexican Cornbread
- 2 pounds Ground Beef
- 1 whole Onion, Diced
- 2 packages Cornbread Mix, Like Corn Kits (not Sweet Cornbread)
- 2 whole Eggs
- 1- 1/2 cup Milk
- 2 cups Shredded Cheese, Like Colby Jack
- 1 jar Sliced Jalapenos
- 1 can Cream Corn
- Brown the ground beef and onion and drain off fat.
- Prepare the corn bread according to the package directions (this is what the eggs and milk are for.)
- Spray a 9x13 pan with cooking spray.
- Spread a thin layer of the corn bread mix in the bottom of pan.
- Next, add the ground beef.
- Spread the cheese over the ground beef.
- Add as many jalapeno slices as you like.
- To the remaining corn bread mix, add the can of cream corn.
- Pour the corn bread mix over the top of casserole and spread it out to the edges.
- Bake according to the directions on the corn bread mix.
- (Note: Ive made this with Jiffy corn bread mix and it was too sweet for my taste.
- I recommend you use a less sweet mix.)
