Chicken With Green Apple-Chipotle Salsa

  1. SALSA: Mix first 7 ingredients together in a small bowl.
  2. Cover and chill.
  3. CHICKEN:.
  4. Mix together the Chile Spice Mix.
  5. Rub chicken with a little olive oil and coat with spice mix.
  6. Grill over medium heat for 6 - 8 minutes.
  7. Do not overcoook.
  8. To ensure especially moist meat, brine the chicken breasts at least 4 hours.
  9. There are great brine recipes on this site.
  10. Plate a portion of the salsa and a chicken breast.
  11. Serve.
