Apricot Chicken Recipe Marc Listokin

  1. Remove the skin from 10 chicken thighs the bone still in.
  2. Add a little oil to a nonstick large skillet and gently brown the chicken thighs.
  3. Mix the mayo and ketchup together to create a homemade Russian dressing.
  4. Add a good brand of apricot preserves to the Russian dressing.
  5. Add a pinch of cumin.
  6. Lay the browned thighs in a large pyrex baking dish.
  7. Brush the Apricot and Russian dressing mixture over and under the thighs.
  8. Bake for 45 to 50 minutes in a pre-heated 345 degree oven .
  9. Remove and let cool
