Asparagus-Bacon Baked Omelet for Two

  1. Heat oven to 350F.
  2. Heat dressing in small ovenproof nonstick skillet on medium-high heat.
  3. Add onions and asparagus; cook 3 min., stirring occasionally.
  4. Meanwhile, whisk eggs in medium bowl.
  5. Stir in tomatoes, bacon bits, thyme and 1/4 cup cheese.
  6. Pour into skillet; cook, without stirring, 3 to 4 min.
  7. or until edges begin to set.
  8. Sprinkle with remaining cheese.
  9. Bake in skillet 20 min.
  10. until center is set.
  11. Let stand 5 min.
  12. ; cut into wedges to serve.
