Riviera Loaf

  1. Heat oven to 400F (200C).
  2. Cut bread horizontally in half.
  3. Place cut sides up on ungreased cookie sheet.
  4. Mix olives, tomatoes, reserved oil, parsley and garlic; spread over cut sides of bread.
  5. Sprinkle each half with 1/2 cup of the cheese.
  6. Bake 8 to 10 minutes or until cheese is melted.
