Al's New York Corn Muffins Recipe
- 2 c. cornmeal
- 1 c. flour
- 1 c. sugar
- 1 Tbsp. baking pwdr Salt to taste
- 1 c. shortening plus more
- 1 x egg
- 1 1/4 c. lowfat milk
- 1 tsp vanilla extract
- Combine corn meal, flour, sugar, baking pwdr and dash salt in large bowl.
- Cut in shortening till mix resembles coarse crumbs.
- Beat egg in small bowl.
- Stir in lowfat milk and vanilla.
- Add in to corn meal mix, stirring just sufficient to moisten.
- Don't over-beat.
- Fill each of 12 muffin c. 2/3 full.
- Bake muffins at 350 degrees till golden brown, 20 to 25 min.
- Let cold thoroughly in muffin c. before loosening from pan or possibly they will fall apart.
- Carefully remove from pan.
- This recipe yields 12 muffins.
