2 Types of Croquettes
- 1 kg peeled Potatoes
- 220 grams Mixed beef and pork mince
- 1 Onion
- 1/2 Carrot
- 1/3 tsp Salt
- 1/3 tsp Coarsely ground black pepper (or powdered pepper)
- 1 tsp Salt
- 2 tsp Curry powder
- 1 Flour
- 1 Panko
- 1 Egg
- 1 Oil for deep frying
- Cut the potatoes roughly and soak in water.
- Mince the onion and carrot.
- Put the potatoes in a large pot, fill with water to submerge the potatoes, and heat.
- When you cover the pot, it might boil over so be careful.
- Heat a frying pan and cook the minced meat.
- After its colour starts to change, add the onion and carrot and continue to fry.
- After the vegetables are cooked through, season with the ingredients and remove from heat.
- Let cool.
- When the potatoes have cooked, discard the boiling water.
- (Slide the lid slightly and drain the water.)
- Be careful not to burn yourself!
- Mash the potatoes with a wooden spatula and heat over medium heat to evaporate the excess moisture.
- After the moisture has evaporated, stir in the ingredients.
- Transfer Step 5 into a bowl and combine with Step 3.
- Transfer half of the mixture into another bowl and mix in the curry powder.
- Shape the mixture and coat with flour, egg and panko (in this order) and deep-fry in 180C oil until golden crisp.
