AMIEs CALDERETTA

  1. Marinate beef in mixture of vinegar, peppercorn, salt and crushed garlic for 2 hours.
  2. Fry pieces of beef in cooking oil.
  3. Add onion and saute until tender.
  4. Pour in tomatoe sauce and boiling water.
  5. Add the green pepper, laurel or bay leaf and hot sauce as desired.
  6. Cover and simmer until meat is tender.
  7. Blend in liver spread.
  8. Cook 5 minutes more.
  9. Serve hot!
