Salmon BLT

  1. Slice tomatoes (about 8 slices); chop dill and capers
  2. Toast bread
  3. Combine dill, capers, mayonnaise, and 1.4 tsp pepper; set aside.
  4. Season fish with salt and remaining 1/4 tsp pepper.
  5. Wrap three slices of bacon around each salmon filet
  6. Preheat large saute pan on medium-high 2-3 minutes.
  7. Place salmon in pan; cook 4-5 minutes on each side or until bacon is crisp and salmon is 145F (or flesh separates easily)
  8. Spread 2 tsp mayonnaise mixture on each bread slice; top with spinach and tomato.
  9. Add salmon and assemble sandwiches; serve.
