Lime-Processed Pickled Cucumbers

  1. Wash cucumbers well.
  2. Cut about 1/16" off the blossom end of each cucumber and discard.
  3. Cut cucumbers into 1/4" slices.
  4. Dissolve 1 cup pickling lime and 1/2 cup salt in 1 gallon water.
  5. in a 2- to 3-gallon crock or enamelware container.
  6. Avoid inhaling lime dust.
  7. Soak cucumber slices in lime water for 12-24 hours, stirring occasionally.
  8. Remove from lime solution.
  9. Rinse, and soak for 1 hour in fresh cold water.
  10. Repeat rinsing and soaking twice more.
  11. Handle carefully, as cucumber slices will be brittle.
  12. Drain well.
