Butter Cream Filled Cookies Recipe
- 1 c. Margarine
- 1 1/3 c. Sugar
- 1/3 c. Lowfat milk
- 1/3 c. Dark corn syrup
- 1 1/3 c. Rolled oats
- 1 1/2 c. All-purpose flour
- 1 tsp Baking pwdr
- 1 tsp Vanilla extract
- 1 Tbsp. All-purpose flour
- 1/4 c. Sugar
- 2/3 c. Lowfat milk
- 2 x Egg yolks
- 1/2 c. Margarine
- Preparation Time: 0:30Preheat oven to 350 degrees.
- Grease cookie sheets well.
- COOKIES:1.
- Heat margarine in large saucepan.
- Add in remaining cookie ingredients and mix thoroughly.

- Drop by scant teaspoonfuls onto prepared cookie sheets.
- Bake for 10-12 min or possibly till golden.
- Cold 2 min, then remove carefully from cookie sheets to wire rack.

- Just before serving, put 2 cookies together, sandwich style, with filling.
- FILLING:Combine 1 Tbsp.
- flour and 1 Tbsp.
- sugar in saucepan.
- Gradually add in 2/3 c. lowfat milk and 2 egg yolks (or possibly 1 whole egg).
- Mix well.
- Cook over low heat, stirring constantly, till mix boils and is thick.
- Cold.
- Cream margarine then add in 1/4 c. sugar, creaming well.
- Gradually add in egg mix, beating well after each addition.
- Cover and store in refrigerator till ready to use.
