Fresh Spanish Rice

  1. Heat water, pour over rice in a heat proof bowl, and let rest for 20 minutes.
  2. Heat oil and garlic in a pan.
  3. Add drained and rinsed rice.
  4. And suate a little before adding the pepper & salt.
  5. Pour in broth and bring to a simmer, cover and reduce heat.
  6. After about 20 minutes, uncover add butter and stir.
  7. Mix in fresh cilantro and tomatoes
