Greek Lamb Crackers
- 3 lamb fillets Safeway 1 lb For $5.99 thru 02/09
- 1 tablespoon olive oil
- 2 cloves garlic, crushed
- salt and pepper
- juice 1 lemon
- 1 tomato, diced Safeway 1 lb For $1.29 thru 02/09
- 1/2 cucumber, diced
- 1/2 red onion, diced
- 1 tablespoon olive oil, extra
- salt and pepper, to taste
- 125g CAPTAIN'S TABLE* Water Crackers
- Marinate lamb fillets in the olive oil, garlic, salt, pepper and half the lemon juice for at least 1 hour.
- Mix the tomato, cucumber, onion, extra olive oil and remaining lemon juice.
- Season to taste.
- Cook the lamb in a hot pan for 5 minutes each side, wrap in foil and rest for 10 minutes.
- Slice thinly and serve, on crackers, topped with the tomato salad.
