Crab And Cheese Casserole
- 2 Tbsp. vegetable oil
- 1 c. sliced celery
- 1/2 c. sliced onion
- 1/2 c. thinly sliced carrot
- 1/2 c. sliced mushroom
- 1/4 c. diced green pepper
- 1 (2 lb.) can whole tomatoes
- 1/2 c. fresh or frozen flaked crab meat
- 1 c. cooked brown rice
- 1/4 tsp. salt
- 1 packet Sweet 'N Low
- 1 bay leaf
- 1/2 c. grated sharp Cheddar cheese (2 oz.)
- Preheat oven to 350u0b0.
- Heat oil in Dutch oven or other ovenproof container.
- Saute celery, onion, carrot, mushrooms and green pepper until onion is transparent.
- Add remaining ingredients, except cheese.
- Let simmer 5 minutes.
- Remove bay leaf.
- Sprinkle with cheese.
- Bake 20 minutes.
- Serve immediately.
