Maid of Honour Cakes

  1. In a saucepan, over medium heat, combine the milk and bread crumbs.
  2. Bring to a boil, remove from the heat, and let stand for 10 minutes.
  3. In a mixing bowl, combine the bread mixture, butter, almonds, sugar, eggs, and zest.
  4. Mix well.
  5. Preheat the oven to 350 degrees F.
  6. Fill each pastry shell with a tablespoon of the filling.
  7. Place on a baking sheet and bake until golden, about 12 to 15 minutes.
  8. Remove from the oven and cool completely.
  9. Garnish with powdered sugar and serve.
