Corn and Olive Loaf
- 2 12 cups plain flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 12 teaspoon bicarbonate of soda
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 1 pinch cayenne pepper
- 60 g butter
- 1 cup grated cheese
- 1 egg
- 1 cup buttermilk
- 1 teaspoon Worcestershire sauce
- 1 cup corn kernel, canned
- 1 cup olive, pitted, chopped coursely
- Sift flour, sugar, baking powder, bicarb soada,salt, mustard and cayenne into large bowl.
- Rub in butter using fingertips till like breadcrumbs.
- Add grated cheese, stir in.
- In a small bowl combine egg, buttermilk and worcestershire sauce, stir together.
- Make a hole in the centre of the flour, pour in liquid.
- Using a wooden spoon mix till ingredients are just moistened.
- Stir in corn and olives.
- Grease loaf tin 18 x 10 cms.
- Pour in batter.
- Bake at 190 C for 45 - 50 minutes or till skewer comes out clean when inserted.
