Matzo Apple Tea Cakes

  1. Preheat the oven to 350 degrees F.
  2. In a medium mixing bowl, whisk together the eggs and oil.
  3. Add the sugar, matzo, potato starch, and salt and mix until blended.
  4. Stir in the apples.
  5. Spray a 2 1/2-inch by 3 1/4-inch muffin tin with non-stick spray.
  6. Fill 3/4 full with the batter and dust with the cinnamon sugar.
  7. Bake until the tops spring back when pressed, about 15 to 18 minutes.
  8. Cool on a rack and remove from the tin when they are at room temperature.
