Apricot and Cinnamon Kasha

  1. Heat oil in a large skillet over medium high heat.
  2. Add onion, kasha, and cinnamon; saute until onion starts to soften, about 3 minutes.
  3. Add broth and apricots; heat to boiling.
  4. Reduce heat and simmer, mostly covered, until kasha is softened, about 10 minutes.
  5. Taste and adjust salt if needed.
