Eggplant Corn Casserole Recipe

  1. Cook eggplant in boiling water for 10 min, then drain.
  2. Mash and add in butter.
  3. Add in the other ingredients, reserving 1 1/2 c. cheese for topping.
  4. Bake at 350 degrees for 1 hour.
  5. Add in reserved cheese, return to oven; bake till cheese is melted.
  6. (This is one of the few casseroles which Billy Ray likes.)
