Eggplant Corn Casserole Recipe
- 1 med. eggplant
- 1 stick butter
- 1 can cream style corn (or possibly corn sliced from cob & 1/4 c. lowfat milk & 1 teaspoon flour)
- 1 sm. minced onion
- 1 minced bell pepper
- 1 c. cracker crumbs
- 1 egg, beaten
- 1 sm. jar pimentos, minced
- 2 1/2 c. grated cheese
- Cook eggplant in boiling water for 10 min, then drain.
- Mash and add in butter.
- Add in the other ingredients, reserving 1 1/2 c. cheese for topping.
- Bake at 350 degrees for 1 hour.
- Add in reserved cheese, return to oven; bake till cheese is melted.
- (This is one of the few casseroles which Billy Ray likes.)
