Indestructible Red Cabbage

  1. Chop the bacon and fry (using a little oil) until crispy in a large casserole dish.
  2. Turn down the heat and add the cabbage, apple, cinnamon, seasoning and the sugar and mix.
  3. Add the red wine.
  4. Put the lid on and turn the heat up until bubbling.
  5. Simmer for 3 hours.
  6. TIP: If you need to leave this for longer you can.
  7. My colleague said she has let this simmer for 5 hours and it still came out lovely.
  8. Hence the name -- indestructible red cabbage!
  9. She also said that it freezes well -- enjoy.
