Mesclun Salad with Stilton and Toasted Walnuts

  1. Whisk together vinegar, shallots, salt and pepper.
  2. In a slow stream add the oils.
  3. Set aside.
  4. Toss together greens, walnuts and dressing.
  5. Serve with Stilton cheese.
