Mesclun Salad with Stilton and Toasted Walnuts
- 1/4 cup sherry vinegar
- 2 tablespoons minced shallots
- Salt, pepper to taste
- 1/2 cup canola oil
- 1/4 cup walnut oil
- 1 pound mesclun salad
- 1 cup toasted walnuts
- Stilton cheese
- Whisk together vinegar, shallots, salt and pepper.
- In a slow stream add the oils.
- Set aside.
- Toss together greens, walnuts and dressing.
- Serve with Stilton cheese.
