Spiced Beef Tajine With Pumpkin and Green Peppers

  1. Heat the oil in a pot ( if you have tajine use it) fry the meat, onions, garlic and ginger, cook till onions are golden.
  2. Add the turmeric, chili powder, stir and add the stock.
  3. cover with a lid.
  4. Simmer till meat is tender.
  5. Add the pumpkin and pimento, cook for 10 minutes adjust seasoning to taste.
  6. Serve with couscous.
