Chicken Fiesta
- 1 to 1 1/2 lb. choice chicken pieces (I use breast tenders)
- 1 lb. ground sausage
- Creole seasoning
- 1 c. chopped bell pepper
- 1 c. finely diced celery
- 1 small onion, chopped
- 1 bunch green onions, chopped with tops
- 1 pkg. Rice-A-Roni
- 1 can Mexicorn
- 1 c. grated Cheddar cheese
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- Sprinkle chicken tenders (or any part of chicken) with Creole seasoning.
- Brown in 2 tablespoons butter.
- Remove and set aside. In same skillet, brown sausage and vegetables until vegetables are tender.
- Cook Rice-A-Roni according to directions.
- Combine the cooked Rice-A-Roni and sausage mixture.
- Add the Mexicorn and the soups.
- Stir in 1 cup of cheese.
- Pour this mixture into a casserole dish.
- Place the chicken pieces on top of the casserole. Bake at 350u0b0 for 25 to 30 minutes.
