Chicken Catch A De Witt Or Chicken Cacciatore Recipe
- 1/4 c. extra virgin olive oil
- 1 (3 to 3 1/2 lb.) broiler-fryer, cut and skinned
- 2 med. yellow onions, peeled and chopped
- 1 clove garlic, peeled and crushed
- 1 (4 ounce.) can mushrooms
- 1 sm. green pepper, cored, seeded and coarsely minced
- 1 (16 ounce.) can tomatoes, undrained
- 3/4 c. dry red wine
- 1/2 teaspoon rosemary
- 1/4 c. tomato paste
- 1 teaspoon salt (optional)
- 1/4 teaspoon pepper
- Heat oil in kettle over moderate high heat for 1 minute, brown chicken well; remove and reserve.
- Stir fry onions 5 min, add in garlic, mushrooms, and green pepper, and stir fry 3-4 min longer till onions are golden brown.
- Add in tomatoes, breaking up clumps, blend wine and tomato paste and stir in along with rosemary.
- Return chicken to kettle, sprinkle with salt and pepper.
- Cover and simmer, stirring now and then, about 3/4 hour till tender.
- Serve over spaghetti.
