Edamame Guacamole
- 2 cups frozen edamame (shelled), thawed
- 2 cups avocados, chopped
- 1/2 cup red peppers, finely chopped
- 1/2 cup scallions, finely chopped
- 1/2 cup Kraft Calorie-Wise Zesty Italian Dressing
- 2 tsp. lime zest
- 3 Tbsp. Fresh lime juice
- 2 tsp. Sriracha sauce (hot chili sauce)
- 1 tsp. garlic, minced
- 1 gal. multi-grain tortilla chips
- Cook edamame in saucepan of boiling water 3 to 5 min.
- or until crisp-tender; drain.
- Rinse with cold water, drain again and pat dry.
- Process edamame in food processor until coarsely chopped; transfer to large bowl.
- Add remaining ingredients, except chips.
- Mix just until combined.
- Serve with chips.
