Lucky 32 Golden Tomato Soup

  1. Place cored tomatoes on a sheet tray and roast at 350 degrees until the skins are blistered.
  2. Meanwhile, melt butter in a sauce pot and sweat onions until golden and soft.
  3. Add vegetable stock, roasted tomatoes, garlic, salt, pepper and thyme; simmer for 5-10 minutes.Puree and then strain through medium holed strainer.
  4. Discard solids.Return liquid to pot and add remaining ingredients.
  5. Bring to a simmer; taste for salt and remove from heat.
