Spinach and Zucchini Ribbon Salad
- 2 each small green and yellow zucchini, trimmed
- 3 cups loosely packed baby spinach leaves
- 1 cup halved grape tomatoes
- 1/2 cup slivered red onions
- 1/2 cup Renee's Cucumber & Dill Dressing
- 1/2 cup Cracker Barrel Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper
- 1/4 cup thinly sliced Kalamata olives
- 1/4 cup chopped toasted walnuts
- Use vegetable peeler to cut zucchini into thin lengthwise strips; place in large bowl.
- Add spinach, tomatoes, onions and dressing; mix lightly.
- Top with remaining ingredients.
