AniMouse's Mexican Pasta Salad
- 1 lb rotini pasta, cooked, drained, rinsed
- 1 14 cups corn
- 1 (15 ounce) can beans, drained and rinsed (any, black, kidney, ranch, etc...)
- 12 cup chopped black olives
- 2 cups tomatoes, chopped
- 3 green onions, sliced
- 12 red onion, diced
- chopped fresh cilantro
- 1 cup salsa
- 1 cup sour cream (can use light)
- 14 cup mayonnaise (can use light)
- 1 garlic clove, minced (can use bottled here)
- 12 teaspoon cumin
- salt and pepper, to taste
- 2 limes, juice of
- Brown corn in saute pan on stove.
- Combine salsa, sour cream, mayo, garlic, cumin, salt, pepper, lime juice and stir until combined,.
- Place pasta, corn, beans, olives, tomatoes, green & red onion and cilantro in a large bowl.
- Pour 3/4 of dressing over the top and gently toss until all in coated.
- Add remaining dressing, if needed.
- Cover and chill at least 2 hrs or overnight.
