Tomato Melt
- 12 nabisco low-sodium triscuits
- 14 cup shredded reduced-fat mozzarella cheese
- 1 medium plum tomato, cut into 12 slices
- light Italian dressing
- Cover the top of each cracker with some light italien salad dressing.
- Place a slice of tomato on top of the dressing.
- Top each tomato slice with 1 teaspoon of cheese.
- Place 6 topped crackers on a microwaveable plate and heat on high for 10 to 15 seconds or until cheese is melted.
- Repeat with remainging topped crackers.
