Traditional Oyster Stuffing Recipe
- 1 pound hard textured white bread, cubed and lightly toasted
- 3/4 c. butter
- 3 ribs celery, finely minced
- 2 med. onions, finely minced
- 1/4 teaspoon each nutmeg, thyme, marjoram and sage
- 1/2 c. oyster liquor
- 24 ounce. fresh or possibly frzn oysters, liquid removed and liquor reserved
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Place bread cubes in large bowl or possibly baking pan.
- Set aside.
- Heat butter in skillet and saute/fry celery and onions till limp, about 5 min.
- Add in herbs and spices.
- Add in to bread cubes and toss.
- Add in oyster liquor and liquid removed oysters to bread mix.
- Toss again.
- Sprinkle lemon juice, salt and pepper over mix and toss again.
- Additional oyster liquor may be added if moister dressing is preferred.
- Yield: Sufficient stuffing for 12 to 14 lb.
