Holiday Coconut Cake Recipe
- 2 (6 ounce.) Packages frzn coconut
- 1 (8 ounce.) carton lowfat sour cream
- 1 1/2 c. sugar
- 1 box Duncan Hines yellow cake mix
- 1 (4 ounce.) box instant vanilla pudding
- 1/2 c. veg. oil
- 1 c. water
- 1 teaspoon vanilla
- 2 Large eggs
- 2 egg yolks
- Combine first three ingredients and set aside.
- In mixing bowl, combine remaining ingredients and beat till smooth.
- Pour into 2 greased 9 inch cake pans.
- Bake in 350 degree oven for 30 min.
- Cold 10 min on rack.
- Split layers to make four.
- Spread coconut mix between layers while hot.
- Ice cake.
