Holiday Coconut Cake Recipe

• 2 (6 ounce.) Packages frzn coconut
• 1 (8 ounce.) carton lowfat sour cream
• 1 1/2 c. sugar
• 1 box Duncan Hines yellow cake mix
• 1 (4 ounce.) box instant vanilla pudding
• 1/2 c. veg. oil
• 1 c. water
• 1 teaspoon vanilla
• 2 Large eggs
• 2 egg yolks

1. Combine first three ingredients and set aside.
2. In mixing bowl, combine remaining ingredients and beat till smooth.
3. Pour into 2 greased 9 inch cake pans.
4. Bake in 350 degree oven for 30 min.
5. Cold 10 min on rack.
6. Split layers to make four.
7. Spread coconut mix between layers while hot.
8. Ice cake.
