Quick Zucchini Pickle Slices
- 1/2 cup white balsamic vinegar
- 2 tbsp. fresh dill chopped
- 2 tsp. salt
- 2 tbsp. water
- 2 md. zucchini sliced into about 1/8" thick rounds
- Combine vinegar, dill, salt and water in a medium bowl.
- Whisk until salt is dissolved.
- Add zucchini and let marinate for 10 minutes tossing often.
- Drain and serve.
