Amazing mac and cheese!
- 16 oz box of macaroni
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 1 cup milk
- 1 cup cream
- 1 salt and pepper, to taste
- 2 cup shredded cheddar cheese (good quality)
- 1/4 box velveeta
- Preheat oven to 400F.
- Cook and drain macaroni according to package directions; set aside.
- In large saucepan, melt butter.
- Slowly add flour mixed with salt and pepper, whisking as you add, until well blended.
- Slowly pour in cream and milk, stirring constantly.
- Bring to a boil.
- Boil 2 minutes, stirring constantly.
- Reduce heat and let simmer for 10 minutes, stirring constantly.
- Add shredded cheddar, little by little, and simmer until cheese is melted.
- Cube the velveeta into small cubes and add to mixture.
- Stir until melted.
- Turn off heat.
- Add macaroni to the saucepan.
- Toss to coat with cheese sauce.
- Transfer macaroni mixture to a buttered baking dish.
- Sprinkle some cheddar on top and bake for 20 minutes.
