Sambar Lentil/Vegetable Soup Recipe
- 1 c. yellow split peas
- 6 c. water
- 1 tbsp. tamarind pulp
- 1 c. warm water
- 1 pound mixed vegetables
- 2 tbsp. melted butter
- 1 tbsp. grnd coriander
- 2 teaspoon grnd cumin
- 1/2 teaspoon grnd black pepper
- 1/2 teaspoon grnd turmeric
- 2 green chilies, sealed/sliced
- 2 1/2 teaspoon salt
- 1/2 teaspoon black mustard seeds
- 1 sm. onion finely sliced
- Wash, soak lentils for 2 hrs.
- Drain, cook in water till soft.
- Soak tamarind in warm water; cold, squeeze pulp.
- Add in lentils.
- Chop vegetables into small pcs (use 1 package frzn minced vegetables).
- Heat 1 Tbsp.
- oil over low heat; fry grnd spices for 1-2 min.
- Add in to lentils with chilies, salt, vegetables.
- Cook till vegetables are soft, about 30 min.
- In 1 Tbsp.
- oil fry mustard seeds and sliced onions till brown.
- Add in to lentil mix.
- Simmer for 2 min; serve.
