Sambar Lentil/Vegetable Soup Recipe

  1. Wash, soak lentils for 2 hrs.
  2. Drain, cook in water till soft.
  3. Soak tamarind in warm water; cold, squeeze pulp.
  4. Add in lentils.
  5. Chop vegetables into small pcs (use 1 package frzn minced vegetables).
  6. Heat 1 Tbsp.
  7. oil over low heat; fry grnd spices for 1-2 min.
  8. Add in to lentils with chilies, salt, vegetables.
  9. Cook till vegetables are soft, about 30 min.
  10. In 1 Tbsp.
  11. oil fry mustard seeds and sliced onions till brown.
  12. Add in to lentil mix.
  13. Simmer for 2 min; serve.
