Carrot And Pecan Cake
- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 2 c. flour
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. soda
- 2 tsp. baking powder
- 3 c. shredded carrots
- 1/2 c. white raisins
- 1 c. chopped pecans
- Frosting
- Beat sugar and oil in mixer bowl until smooth.
- Add eggs 1 at a time, beating well after each addition.
- Mix flour, salt, cinnamon, soda and baking powder in bowl.
- Add to egg mixture; beat well.
- Add carrots gradually, mixing well.
- Stir in raisins and pecans.
- Pour into 3 greased and floured 9-inch round cake pans.
- Bake at 325u0b0 for 25 minutes.
- Remove to wire racks to cool. Spread frosting between layers and over top and side of cake. Garnish with additional pecans.
- Yield:
- 12 servings.
