Roman-Style Chicken

  1. Season the chicken with salt & pepper.
  2. In a heavy, large skillet, heat the olive oil over medium heat.
  3. Cook the chicken until browned on both sides.
  4. Remove the chicken from the pan and set aside.
  5. In the same pan with all of the drippings, add the onions, peppers and prosciutto and cook until the onions & peppers have browned and the prosciutto is crips.
  6. Add the garlic and cook, about 1 minute.
  7. Add the canned tomatoes with liquid, wine and herbs.
  8. Return the chicken to the pan and simmer, covered, until the chicken is cooked through, about 20 to 30 minutes.
