Spanish rice with chicken
- 1 lb. boneless, skinless chicken breast cut into cubes
- 1 1/2 cup uncooked white rice, I use basmati
- 3/4 cup beer, I use a light color beer
- 3/4 cup chicken broth, if you do not wish to use alcohol double the broth
- 4 oz of pimento with liquid
- 1 1/2 cup pimento stuffed green olives
- 1 medium onion, chopped
- 2 tbsp achiote oil or olive oil
- 4 clove of garlic, minced
- 1 tsp smoked spanish paprika
- 1 1/2 tbsp of salt
- 1/8 tsp tumeric
- In large skillet on medium heat, saute chicken in achiote oil until browned about 10 minutes.
- Add in garlic and onion and cook another minute.
- Add pimento, olives and rice plus seasonings.
- cook 2 more minutes.
- Add beer and broth and cover, reducing heat to low.
- Simmer for 20 minutes or until rice is tender.
