Chocolate Pound Cake
- 3 c. unsifted all-purpose flour
- 3/4 c. unsweetened cocoa powder
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 c. unsalted butter, softened
- 3 c. granulated sugar
- 5 large eggs
- 1 1/4 c. milk
- 4 oz. unsweetened chocolate, grated
- 1 Tbsp. vanilla extract
- confectioners sugar
- fresh berries and mint sprigs
- Preheat oven to 350u0b0.
- Grease and flour 10-cup 10-inch tube pan.
- In sifter, mix flour, cocoa powder, baking powder and salt. Sift into large bowl.
- In large bowl with mixer at high speed, beat butter until fluffy.
- Gradually beat in sugar, beating until light and fluffy.
- Beat in eggs, one at a time, beating well after each addition.
- Alternately beat in flour mixture in fourths and milk in thirds, beginning with flour.
- Beat in grated chocolate and vanilla extract.
