Dumpling
- 800 grams Minced pork 20% fat
- 1 bunch Spring Onion
- 1 bunch Chinese garlic Chives
- 2 tbsp Chinese Rice Wine
- 1 tsp Chicken stock Powder
- 1 tbsp Oyster Sauce
- 2 tsp Sesame Oil
- 3 tbsp Corn starch
- 1/4 cup water
- 1/2 tsp White pepper powder
- 2 cup Plain flour
- 3/4 cup water @ 80C
- 1/2 tbsp Sugar
- 1/2 tsp salt
- 3 tbsp Cooking Oil
- mixed meat with marinate ingredients, keep In fridge
- boil water until 80C, Stir in Salt & Sugar
- add hot Water mixture to flour Knead into dough.
- add in oil, Continue to knead Until It turn smooth.
- let it rest for 10-15 minutes
- divide dough into 2, then into 2 again Until it reach 64 pieces...
- Shape the Small dough into ball, flatten it with a rolling pin until it reach 2 mm thickness.
- filled it with meat mixture & make it into a dumpling
- Cooking: bring 1/2 pot of water to boil, add in 1 tablespoon of salt.
- put in around 10 pcs of dumpling, stir slowly So it won't Stick together!
- Once the dumpling floated add in 1/2 cup Cold water, Cover With lid bring to boil again, repeat these step for another 2 times, dumpling Shall be ready after these.
