Grilled Chicken and Apple Salad

  1. Grill chicken 3 to 4 minutes on each side or until cooked through, brushing occasionally with dressing (using 1/4 cup dressing for each pound of chicken).
  2. Meanwhile, grill apples until tender, turning occasionally.
  3. Cut chicken diagonally into slices; coarsely chop apple slices.
  4. Place in large bowl.
  5. Add spinach and radicchio; toss lightly.
  6. For each serving: Place 1/2 cup of the lettuce on salad plate; cover with 1 cup of the chicken mixture, 2 Tbsp.
  7. of the cucumbers and 1-1/2 tsp.
  8. of the walnuts.
  9. Drizzle with 2 Tbsp.
  10. of the remaining dressing.
