Grilled Chicken and Apple Salad
- 24 each boneless skinless chicken breasts
- 1-1/2 qt. apples, cut into 1/4-inch-thick slices
- 1-1/2 qt. KRAFT Signature Peppercorn Ranch Dressing, divided
- 3 qt. spinach leaves, cleaned, torn
- 3 cups radicchio, cleaned, torn
- 3 qt. lettuce leaves, torn
- 3 cups cucumbers, sliced
- 3/4 cup Toasted walnut pieces, chopped
- Grill chicken 3 to 4 minutes on each side or until cooked through, brushing occasionally with dressing (using 1/4 cup dressing for each pound of chicken).
- Meanwhile, grill apples until tender, turning occasionally.
- Cut chicken diagonally into slices; coarsely chop apple slices.
- Place in large bowl.
- Add spinach and radicchio; toss lightly.
- For each serving: Place 1/2 cup of the lettuce on salad plate; cover with 1 cup of the chicken mixture, 2 Tbsp.
- of the cucumbers and 1-1/2 tsp.
- of the walnuts.
- Drizzle with 2 Tbsp.
- of the remaining dressing.
