Ponzu
- 1 cup fresh yuzu (Japanese citrus) or 1/2 cup each fresh lemon and fresh lime juice
- 1 cup soy sauce
- 1/3 cup mirin or 2 tablespoons honey
- 1 tablespoon sugar
- 1/2 cup dried bonito flakes
- Whisk together all the ingredients in a mixing bowl, cover, and refrigerate overnight.
- Strain into an airtight container and refrigerate until ready to use.
