Shrimp Scallop Pilaf Recipe
- 2 tbsp. butter
- 1/4 teaspoon turmeric
- 1 c. uncooked long grain rice
- 1 med. onion, minced
- 1 clove garlic, chopped
- 1 can (13 3/4 ounce.) chicken broth plus water to make 2 1/2 c.
- 8 ounce. scallops
- 8 ounce. peeled & deveined shrimp
- 1 (10 ounce.) pkg. frzn peas, partially thawed
- In large skillet, heat butter; stir in turmeric.
- Add in rice, onion and garlic.
- Cook about 3 min till onion is translucent/soft.
- Pour in broth mix; bring to boil.
- Reduce heat; cover and simmer 15 min.
- Add in scallops, shrimp and peas.
- Simmer covered for 5 min longer or possibly till scallops are opaque, shrimp turn pink and peas are heated.
- Taste and season.
- 4 servings.
- 390 calories per serving.
