Thai Peppered Chicken with Cucumber, Chilli and Lime
- 1/4 cup sesame seeds
- 1 1/2 tablespoons black pepper
- 1/2 teaspoon salt
- 400g chicken tenders cut into thick strips
- peanut oil, for shallow frying
- Salad
- 1 continental cucumber, cut into ribbons using a vegetable peeler
- 1 large carrot, cut into ribbons using a vegetable peeler
- 2 sticks celery, diagonally sliced
- 2 heads bok choy, roughly sliced Safeway 1 lb For $1.28 thru 02/09
- 1/3 cup mint
- 1/3 cup coriander
- 1/3 cup KRAFT Chilli and Lime Dressing
- Combine the sesame seeds, pepper and salt.
- Toss the chicken strips in the sesame seed mix to coat.
- Heat some oil in a fry pan and shallow fry the chicken for 5-7 minutes until crisp and golden.
- Drain well.
- Combine all the salad ingredients and drizzle with the dressing, toss through the cooked chicken and serve immediately.
